On my second trip to Jamaica I, a lifelong vegetarian, tasted jerk chicken. I floated down the Marth Brae River on a bamboo raft and we stopped at a little picnic area with a roof. An elderly lady with curiously blue eyes came out and served us the chicken. Much to my husbands dismay I ate the chicken-at first it was just to avoid hurting an old woman's feelings but then the heavenly taste overtook me. I had to have more! So after many years of trying to duplicate that taste here it is! - 4 chicken breasts or 6 chicken legs
- 1C vinegar
- 1/2C soy sauce
- 1/4C lemon juice
- 1/4C oil
- 1 onion chopped
- 1 garlic clove minced
- 1T allspice
- 1T sugar any kind
- 1/2 T ground cloves
- 1/2 tsp cinnamon
- 1/2 tsp nutmeg
- 1 tsp hot pepper flakes
Combine all ingredients in a large bowl, mix it up and add the chicken. Coat the chicken and cover and refrigerate all day or even overnight. Heat up your grill to a low heat and remove chicken mixture from the fridge. Place chicken on grill and turn constantly. Heat up leftover marinade for a minute while boiling then pour over chicken. I often make thisin the winter when my bbq is not available so all I do then is pour the whole thing into a shallow baking dish and cook it slowly on about 300 degrees for about 45-50 minutes. The water will evaporate from the marinade leaving only jerk chickeny goodness.
